Do you love to eat dal fry in dhabas? But unable to visit for your busy schedule? Then do not worry. This recipe will surely help you have your favourite dhaba-style dal fry at home within 35 minutes. Even if you are a newbie, making the perfect dal fry by following this recipe would be a piece of cake.

- To cook savoury dal fry, take 1 cup of toor dal and wash 3-4 times to clean properly. Wash them until the water comes clear. If you have time soak them for 30 minutes in lukewarm water to reduce the cooking time.
- Take a pressure, and add 2 and a half cups of water and the lentils. Put the pressure cooker on a medium flame for 3-4 whistles. Keep the cooker aside till the pressure releases completely.
- Then chop the onion finely and slit the green chillies. Make a smooth puree of the tomatoes or you can chop them finely if you want. And finely chop the coriander leaves. Keep the prepared veggies aside and open the lid of the pressure cooker. Stir the cooked lentils and mash roughly.
- Now put a pan on the gas, pour 2 tablespoons of ghee and add whole spices. Add half a teaspoon of cumin and mustard seeds and let it splutter for a moment. Then add 2 dried red chillies and one pinch of Hing for dhaba style dal fry. Break the red chillies before adding them to the pan.
- Once the spices get sauteed, add the chopped onions and green chillies. Fry them until turns golden. Then add ginger garlic paste and mix with the fried onions. Saute them for a minute to eliminate the raw fragrance of ginger garlic. After that, add chopped or pureed tomatoes and sprinkle some salt. Turn the gas on medium flame and saute for 2-3 minutes until the oil gets separated.
- Now add half a teaspoon of turmeric, red chilli powder, and garam masala. Mix all the ingredients well and saute for another 2-3 minutes. The masala in the pan will start separating from the oil and releasing an aromatic fragrance. Pour the mashed dal at this point and stir well.
- Mix the dal with masala properly. Keep the flame on medium. Add some water if you feel the consistency of the dal is too thick. Cook until it starts boiling. Taste it and add salt if required. Let the dal boil till reaches the desired consistency.
- Then add half a teaspoon of crushed kasuri methi, stir once and decorate with chopped coriander leaves. Put the dal in a bowl and add 2 tablespoons of lemon juice over the indian cuisine. Your dhaba-style dal fry is ready to serve. Serve it with jeera rice, roti, or paratha.
